The prestige champagne Dom Perignon is produced by Moet Chandon. It is the luxury model of the range, so to speak. It is one of the best champagnes available to consumers, which is represented in its price tag.
It is named after a Benedictine monk who was an key pioneer for quality for the champagne industry but contrary to popular belief did not discover the actual champagne production method.
Dom Perignon was first produced in 1921 however, it was not until 1936, fifteen years later, that it was released to the market. With Dom Perignon being a vintage champagne it is only produced during the best growing years. This means that it is very unlikely that a batch is produced every year, it is usually only produced every few years when the crop has had a good growing season. Because it is a vintage champagne, it is required that all grapes used in the production be from the same season.
In contrast, many other champagnes make a yearly production and will use grapes from a number of years. It is for this reason why Dom Perignon is a champagne held in such high regard.
Around 5 million bottles of Dom Perignon are produced in each vintage. The champagne itself is made up of a mixture of 45% Pinot Noir and 55% Chardonnay. Coming into 2009, the most recent release of Dom Perignon is from 2000, while the Perignon Rose is a 1998 vintage.
Dom Perignon is shelved and aged for at least one year before it gains the renown silky feel that it is famous for.
The man at the helm of production is currently Richard Geoffroy, who was appointed to as winemaker in 1998.
