A Cake Recipe Using Zucchini (Courgette) and Chocolate
Ingredients:
Half C. to One C. choccie chips
three courgette, approx. 6 inches in length, cut into shreds (roughly two C.)
1 tsp cinnamon
2 0.5 Cup flour
three free-range eggs
1/2 cup unsalted butter
1 t. vanilla flavoring
1/2 C. white sugar
1 cupful demerara sugar
half a cup vegetable oil
0.5 Cup buttermilk
four T, cocoa powder
One tsp common salt
2 teaspoon bicarb of soda
Method:
In advance, preheat oven to 325 degrees F.
Lightly grease a 9″ x 13″ cake pan and place to the side.
In mixing bowlmix the brown and white sugar, butter and oil.
Break in the eggs, the vanilla and the buttermilk and stir well until well mixed.
With the aid of a sieve, sieve the cinnamon , flour, cocoa, soda and salt until well combined and lump free.
Stir both mixtures together
Stir in the shredded zucchini and give it a few stirs.
Pour it all into pan and spinkle the top with chocolate chips.
Put into the pre-heated oven and bake for 45 mins.
Allow it to cool down a bit, then turn out on wire rack.
